This recipe evolved from a recipe for Cuban Bread which I found in The James Beard Cookbook on page 57 (14th printing, 1976). One thing that I have found with many recipes in cookbooks is that they are a little vague on details. Some of the missing information can be the difference between success and failure.
With Jake's Bread (my brothers and my wife call me Jake) I set out to put down all the steps to making a great bread. In doing so I made some modifications to the recipe. I think you will find that if you follow the instructions you will get the result shown in the image above.
